Shared Computer lab and Video editing Data storage

This question is for students and faculty as well as the technical staff who look after the video editing computer equipment. We have a prof who wishes to teach a video editing class in a shared public access computer lab. No problem with processor, OS, Ram and the like, but we cannot leave the students data on the local drive and expect it to be safe between classes. What are you guys doing with the video material you edit during class? How are your labs setup?
